60g blanched hazelnuts
1 oz parmesan
2 cloves of garlic
About 3 tablespoons of extra virgin olive oil
Put all of the ingredients in a food processor and blend to a paste. Add more olive oil if it is too dry and crumbly. Stir it through freshly cooked pasta and sprinkle over your favourite grated cheese.
Goes well with a little leftover roast chicken.
